Stir Fry Shrimp and Bananas

2 tablespoons butter
2 onion, chopped
1 clove garlic, minced
2 teaspoons curry powder
1 tablespoon preserved ginger, minced
1 tablespoon cider vinegar
1/2 teaspoon ground allspice
1 cup apple juice
1 tablespoon cornstarch, mixed with a little water
1 tablespoon cider vinegar
1 1/2 pounds fresh shrimp, shelled and divided
4 ripe bananas, peeled, cut in 1/2 inch slices and gently tossed in a little lemon juice

In a wok or large saucepan, heat the butter; in it cook the onions and garlic until translucent. Stir in curry, ginger, vinegar and allspice. Add the shrimp and cook them, stirring constantly, until they are just bare pink. Add apple juice and cornstarch and cook the mixture, stirring constantly, until it is thickened and smooth. Add the bananas, stirring gently. Cook them only long enough to heat them through.
